Nakiri with 80CrV2 Core and 15n20 Cladding – Monowood Teak Handle

A nakiri with an 80CrV2 core and 15N20 cladding, forged by hand in Groningen. A nakiri is a Japanese vegetable knife with a straight edge. That is san mai, three layers: the hard core takes the edge, the outer layers keep the blade tough. I forged the hollow into the blade, so food lets go of it more easily when you chop. The handle is one piece of teak, without a ferrule. A nakiri does one job and does it well.
