San Mai koksmes met gespalteerd berken heft

The first of a twin set that I made, a chef's knife forged by hand in Groningen. The blade is san mai with an 80CrV2 core and 15N20 cladding, which is three layers: the hard core takes the edge, the outer layers keep the blade tough. I brushed the forge scale away, so the finish is clean and shiny, brute de forge. The handle is spalted birch, birch that fungi have started to colour, which leaves dark lines in the wood, and the ferrule is brass. I had never used spalted birch before these two, and I love how it looks.
